For the novice cook, walking through the herbs and spices aisle can be quite an eye-opener. There they are, stacked from floor to ceiling. Why are they all the same colour? What do you do with this stuff anyway? You eye up the paprika, oregano, coriander, and rosemary. Herbs and spices, however intimidating and unnecessary they may seem, can be your best friends in the kitchen.
The herb jack of all trades, thyme matches well with lots of other herbs such as sage, oregano, parsley and even rosemary (so basically, any green herb). It is also great for flavoring stews, casseroles and sauces. It matches well with most meats, but especially lamb and chicken.
